Domaine François Carillon - Puligny-Montrachet 2024
Located in the heart of Puligny-Montrachet, Domaine François Carillon continues a family winemaking tradition with origins dating back to 1520. After many years working within the family estate Louis Carillon, François Carillon created his own winery in 2010, pursuing a demanding approach to viticulture and winemaking. His vineyard mainly extends over the appellations of Puligny-Montrachet, Chassagne-Montrachet, and Saint-Aubin, with a preference for the great limestone terroirs of the Côte de Beaune. The Puligny-Montrachet Village holds a central place in his production and serves as an excellent introduction to the estate's style. The plots rest on clay-limestone soils that promote the mineral expression and natural finesse of Chardonnay. François Carillon favors meticulous vineyard work, with regular plowing and particular attention to yield control. His wines are distinguished by their precision, freshness, and measured use of oak, always serving the expression of the terroir.
The Puligny-Montrachet 2024 is made exclusively from Chardonnay, sourced from several parcels of the appellation selected for their complementarity. The harvest is done manually to preserve the integrity of the grapes and allow rigorous selection upon arrival at the winery. After gentle pneumatic pressing and static settling, the musts are transferred to oak barrels for alcoholic and malolactic fermentations. The aging continues for about twelve months in barrels, with a moderate proportion of new wood so as not to mask the personality of the Chardonnay. An additional period in tank then allows harmonizing the different components of the wine before bottling. The 2024 vintage, marked by cool climatic conditions and significant sanitary pressure in Burgundy, required great vigilance in the vineyard and careful grape selection. In this context, François Carillon's precise work should preserve the tension and elegance characteristic of the great whites of Puligny-Montrachet.
The Puligny-Montrachet 2024 should offer a particularly pure and chiselled expression of Chardonnay, with a delicate bouquet of lemon, fresh pear, and white flowers. Upon aeration, nuances of white peach, fresh almond, and hazelnut may gradually complement this aromatic palette. The palate promises to be straight and energetic, supported by precise acidity that brings momentum to a delicately enveloping texture. Barrel aging contributes to the wine's depth and texture without compromising its natural freshness. A chalky and saline dimension should accompany the finish, extending the tasting with finesse and persistence. Still young, this Puligny-Montrachet has the potential to gain complexity over the years, gradually developing notes of fresh butter, dried fruits, and delicate honey. It will ideally accompany seared scallops, turbot with beurre blanc, roasted lobster, Bresse poultry with cream, or mushroom risotto.
