Alice and Olivier De Moor - Mood of the Times 2024
The Alice and Olivier De Moor estate, located in Courgis in the heart of the Chablis region, has become an essential reference for lovers of lively and precise wines. Since the 1990s, the couple has been working their vines organically, with an approach inspired by biodynamics and a deep respect for the terroir. The L’Humeur du Temps 2024 cuvée comes from a blend of different Chardonnay parcels situated on the typical limestone soils of Chablis, rich in marine fossils. This Kimmeridgian terroir gives the wine a very marked mineral signature and great natural tension. In a vintage with low yields, this cuvée reflects even more precisely the identity of the estate and the purity of the fruit. It embodies a sincere, lively, and unadorned Chablis, faithful to the philosophy of the De Moor family.
In the cellar, vinification is carried out naturally, without unnecessary inputs, with fermentations on indigenous yeasts and aging in barrels for about a year. The nose opens with aromas of fresh citrus, green apple, and white flowers, supported by an elegant mineral framework. On the palate, the wine offers a remarkable balance between zesty freshness and breadth, with a texture that is both silky and taut. The chalky minerality is fully expressed, accompanied by a beautiful energy that enlivens the whole. The mid-palate gains depth before stretching towards a long, saline, and precise finish. The whole stands out for its purity, uprightness, and intensity without heaviness.
Served between 10 and 12°C, it will ideally accompany oysters, shellfish, grilled or lightly sauced fish, as well as dishes with iodized accents. Its tension and finesse also make it an excellent partner for a refined and contemporary cuisine. Accessible in its youth, it nevertheless has an interesting aging potential, developing more complex and slightly honeyed notes over time. The Humeur du Temps 2024 perfectly illustrates the De Moor style: a straight, mineral, and vibrant wine where the terroir expresses itself with great clarity. It is an emblematic cuvée to understand the full nobility of great natural Chablis.
