Nestled in Saint-Jean de Minervois , the micro-distillery founded by Patricia and Laurent Gaspard produces fresh , pure and fragrant eaux-de-vie, thanks to an open-fire copper still designed by Jean-Louis Stupfler . The work is artisanal, based on organic fruits picked at full maturity , without any mechanization , and unfiltered distillates , coming only from the heating cores .
This characterful gin is distilled from spring herbs from the Haut-Languedoc Regional Park : juniper , cade , sap , thyme flowers , fennel shoots , wild lavender , pine cones .
"On the nose, elegant aromas of juniper, resin, and wildflowers. On the palate, the attack is fresh and vegetal, carried by notes of thyme, fennel, and a delicate woody touch of sap. An expressive gin, evoking the garrigue in spring, between aromatic finesse and distilled purity."
