Iwamura Brewery was founded in 1797 in Iwamura, Ena District of Gifu Prefecture in Japan . The Watarai family began producing sake, which they then paid as an annual tribute to Iwamura Castle. At the time of its creation, it also produced miso and soy sauce, which is why the name of the brewery in Japanese is jôzô (fermentation/brewing) and not shuzô (brewery). In the middle of the 20th century, it devoted itself exclusively to the production of sake. Rice is grown in the area and the water comes from a well dug over 400 years ago. The polishing rate of rice averages 52%. The water is low in calcium and magnesium, resulting in slower fermentation and a milder sake taste.

The Onnajoshu cuvée is a Junmai Daiginjo type sake whose Yamadanishiki variety rice is 40% polished. It has a fruity fragrance and a delicate flavor.
