Domaine Philippe Valette - Mâcon-Villages 2020

Domaine Philippe Valette is located in the village of Chaintré, in the Mâconnais in Burgundy . From 1990, the couple Philippe and Cécile Valette decided to cultivate their 15 hectares of vines in organic farming , with the principles of biodynamics from 1992 but without certification . Patience is their philosophy: they harvest the grapes at optimum maturity, even if it means reducing yields, and favor long aging in barrels.

Mâcon-Villages is made from Chardonnay whose vines are around 20 years old, grown on clay-silt soil. The harvest is done manually and the grapes are pressed slowly. The wine is aged on fine lees for 24 months in oak barrels that have contained between 3 to 5 different wines.
