Domaine Hubert Lamy - Saint Aubin 1er Cru - En Remilly 2018
Domaine Hubert Lamy is located in the commune of Saint-Aubin, in the Côte de Beaune of Burgundy. The Lamy family has been working in the vineyards since 1640 but the modern Domaine Hubert Lamy was created by eponym Hubert Lamy in 1973. Before creating his own domaine Hubert worked with his father, Jean Lamy. At that time, the domaine was covering around 8 hectares, planted mainly in regionale appellations. Most of the development of the Domaine happened during the 1990's when new vines were bought or rented. Olivier Lamy, having first studied winemaking and commerce, joined the family domaine in 1995. Prior to joining his father, he did training courses in several other estates and tasted wines from all over the world. With this experience, he was able to bring new ideas and new methods of working in the vines and in the cellar. Today, the Domaine Hubert Lamy has 18.5 hectares of vines in 20 appellations including Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay. The terroirs of Domaine Hubert Lamy are mainly made of limestone. The vineyard is conducted in organic farming, but not certified.
The Chardonnay grapes are gently pressed in a pneumatic press, with little settling then placed in 300-litres barrels or demi-muids (600 litres) aged 1 to 5 years, where the grape juice will ferment. Controlled temperature in barrels and a cold cellar promote long alcoholic fermentation, up to 90 days. The wines are lightly stirred in order to obtain a suspension of the lees. The malolactic fermentation takes place in barrels then the wines are racked in August, fined with casein and lightly filtered with Kieselgur. The doses of sulfur dioxide are provided according to the analyzes. Bottling is done after 12 to 18 months of aging.
Saint-Aubin En Remilly 1er Cru is made from Chardonnay from a 2-hectare parcel, planted in 1989.
