Domaine Arnaud Ente - Meursault Village "Clos des Ambres" 2006
Domaine Arnaud Ente is located in Meursault, in Burgundy. Arnaud's family is from the north of France; his father married the daughter of a Puligny winemaker, Camille David, and Arnaud was born in 1966. The vineyards in this connection are currently operated by Arnaud’s brother, Benoit Ente and his aunt. While working at the legendary Coche Dury, Arnaud married Marie-Odile Thévenot in 1991 and the following year began working in Meursault, cultivating vineyards rented from his father-in-law, winemaker Phillipe Thévenot. During the 1990s, Arnaud's wines gained a lot of attention for their opulent style, due to his preference for late harvests for maximum maturity. Since 2000, the wines have displayed a more complex style, naturally acidic, with enhanced minerality. His wines are today among the best of the appellation.
Arnaud's goal is to do the best possible job in the vineyards he has. He currently operates 4 hectares with a total staff of four: himself, his wife Marie-Odile and two employees. Arnaud is just as meticulous in the cellar as in the vineyard. The grapes are sometimes crushed before being pressed in a hydraulic press, before the juice is settled and then put in barrels. Large 600-litres barrels are used for his Aligoté, Bourgogne Blanc and part of his regular Meursault cuvée. The rest is vinified and aged in normal barrels for the first year, without placing too much emphasis on new oak. With the thoughtfulness for which Arnaud is known, the percentage of new wooden barrels used for his best wines has dropped from 35% to 20% and a variety of different barrel types are now used to increase the complexity of the final wines. The must is left to stand for 24 hours then the clear juice and the fine lees are put in barrels for 11 months of aging before being racked in vats for a further maturation of six months. They are bottled without fining or filtration.
The Clos des Ambres is the most stony part of the En l'Ormeau plot. The vine was planted in 1952-1953.
