Château Henri Bonnaud - Steff Rosé 2021

Château Henri Bonnaud ligt in Tholonet, in de appellatie Palette in Provence. Het landgoed behoorde toe aan Henri Bonnaud, de grootvader van wijnmaker Stéphane Spitzglous, en was destijds een gemengd landbouwbedrijf. In 1996 stemde de grootvader er uiteindelijk mee in dat Stéphane het overnam ondanks de moeilijkheden van het boerenwerk. Na meerdere jaren hard werken om zijn wijngaard te creëren, vinifieerde hij zijn eerste oogstjaar in 2004. Vanaf 2010 koos hij voor een gecertificeerde biologische landbouw sinds 2013. Zijn filosofie is ook om dit werk voort te zetten in de kelder, door respect te hebben voor de grondstof, het beperken van toevoegingen en de voorkeur te geven aan producten van natuurlijke oorsprong om de specificiteit van elke terroir en elke druivensoort te behouden. Het domein beslaat 14 hectare in AOC Palette. De andere percelen (ongeveer 10 hectare) zijn geclassificeerd als Côtes de Provence Sainte-Victoire, Côtes de Provence en IGP Méditerranée.

Steff Rosé is een blend van Syrah en Grenache. De oogst wordt ontsteeld en vervolgens gemacereerd gedurende 6 tot 8 uur. De druiven worden daarna geperst en vinifieerd in roestvrijstalen tanks.
