Of ze nu jong of oud zijn, we geven de voorkeur aan het decanteren van wijnen. Het is een teken van respect voor de oudste wijnen, een teken van vertrouwen in de jongere.

Een oude wijn net voor het serveren decanteren helpt ervoor te zorgen dat de helderheid en glans niet worden vertroebeld door het natuurlijke bezinksel dat zich door de jaren heen heeft gevormd.

Een jonge wijn enkele uren voor het serveren decanteren geeft de wijn de kans zich te openen en een ontwikkelingsstadium te bereiken dat normaal gesproken meerdere jaren rijping zou vereisen." (Reflecties over decanteren door Christian Moueix)
